I have verified that the data coming out of the WiFi module is correct, but the Arduino seems to be missing characters. This seems to happen almost at random. You can try to figure out the right pin mapping and use an I2C scanner to find the address, but if you install and use the hd44780 library that is done automatically by the library. Some LCD's need a negative contrast voltage, check the datasheet of the display. If the contrast voltage is not correct the display will stay blank. I came across the same problem until i saw the negative voltage must be applied :-)
